Broccoli, Cauliflower & Cheese Soup

3-4 cups broccoli florets2-3 cups cauliflower florets3.5 cups (900 ml) low sodium chicken broth2 tablespoons olive oil4 cloves of garlic1 stalk celery chopped1/2 cup red onion2 cups 1% milk2 cups shredded low fat cheddar cheese
Boil broccoli and cauliflower in broth until vegetables are soft.
Saute onion, celery and garlic in olive oil.
When broccoli and cauliflower mixutre is ready, add sauteed vegetables.
Blend vegetables in blender until smooth
Put blended mixture back in pot.
Add milk and cheese, stirring consistently.
Simmer at low heat for at least half an hour. Like most soups the longer it simmers the better it tastes!
