Veal Marsala

Ingredients
4 3oz slices Veal Sirloin Sliced Scalapini Style1 tbsp Salt1/2 tsp Pepper1/2 cup Flour for Dredging2 Eggs for Eggwash2 cups Fresh Bread Crumbs (not dried)1/2 tspOregano1`tsp Garlic Powder1 tsp Basil1 tbsp Parsley3 tbsp Extra Virgin Olive Oil12 Mushrooms (assortment of oyster, shitake, button)1/4 cup Onion (walla walla) diced 1/2 cup Marsala Wine (drinking, not cooking wine)1 cup Chicken Broth low sodium1/4 cup Heavy Whipping Cream
Directions
This makes 8 pieces of veal with about 1/8 cup sauce for each piece.

Take 4 veal sirloin pieces sliced to scallapini style by bucher (very thin) tenderize lightly. Cut in half. Sprinkle lightly with salt and pepper on each side. Dredge in four, then eggwash, and finally in fresh bread crumbs (bread crumbs contain the parsley, oregano, basil, and garlic powder). Place on a tray and let set for 10min or so till the egg seals onto the bread crumbs. Preheat pan on stove, medium heat, place 3 tablespoons of Olive Oil in pan and add in veal. Brown till dark golden on each side, remove from pan. Add mushrooms (sliced) to pan, brown them in the drippings, add in onions, cook till softened. Pour in Marsala wine, Chicken broth. Bring to a boil, reduce down to about 1/2, add in whipping cream. Place Veal back in pan and simmer for 5 min.
