Frijoles Negros

Ingredients
2 c. black beans, rinsed1 large onion, chopped5 cloves garlic, finely chopped2 whole bay leaves5 c. water2 T. olive oilpinch cuminsalt, to taste
Directions
Makes 8 servings.

Combine all ingredients into slow cooker. Turn on high setting for 5 hours, or low for 8 hours. Check water level during cooking and remove from heat when beans are tender.

Remove bay leaves. Serve beans over rice with tomato wedges and lime juice.

    This was very very good and I will be making this often! I topped mine with chopped tomato, a few chopped pickeled jalapenos, a little hot sauce and a squirt of lime juice just before serving.. - 5/3/10
