Apple/Oat Crumble

4 small apples, cored, peeled and cut1 Tbsp lemon juice1-1/4 tsp cinnamon3/4 tsp nutmeg1/8 tsp ground ginger1/3 c old fashioned oats1/2 c quick oats3 Tbsp organic brown sugar2 Tbsp smart balance omega spread (butter)
Drizzle cut apple with lemon juice - let set about 10 minutes.
Preheat oven to 325*.
Put apple, 1/2 tsp cinnamon, 1/4 tsp nutmeg and 1/8 tsp ground ginger in medium saucepan - cover and cook over medium heat, stirring occasionally, about 10 minutes.
Meanwhile, mix oats, 3/4 tsp cinnamon, 1/2 tsp nutmeg, brown sugar and butter. Will be "clumpy".
Put apple mixture in small corning ware dishes. Top with oat mixture.
Bake in 325* oven about 30 minutes.
Serves 2
Great as a breakfast or "anytime" snack.
