Lila's Hot and Sour Soup

Ingredients
6 cups chicken broth, fat free1 c. sliced mushrooms1 10 oz package frozen spinach1 large carrot, shredded1 cup cabbage, shredded1 small onion, chopped small8 ounces deli turkey ham, low fat/fat free1/2 to 2 tsp crushed red pepper or ground cayenne, to taste1 tsp garlic powder, more to taste1/2 tsp ground ginger2 Tbls. cider or white vinegar
Directions
Combine all ingredients, using the larger amount of hot pepper if you like it really spicy (I do!) Bring almost to a boil, turn heat down and simmer until veggies are tender, about 8-10 minutes. Taste and adjust seasonings. You may want to add more garlic or a dash more vinegar. For a vegetarian/vegan friendly recipe, use vegetable stock instead of chicken broth and leave out the ham. This is good with tofu added, too, but I rarely have it on hand. This is a great soup to use up whatever odd veggies you have on hand, but I think the mushrooms and cabbage are necessary for it to taste like true hot and sour soup. Enjoy!
