Twice baked potato with broccoli

Ingredients
1 russet potato, baked1/2 cup broccoli, steamed and chopped1 wedge laughing cow light cheese1/4 cup 1% milk1 oz cheddar cheeseSalt and pepper to taste, cayenne optional
Directions
Cut potato in half and carefully scoop out inside leaving about a 1/4 inch shell. Combine potato innards with laughing cow, milk, broccoli and seasoning. Spoon back into potato halves and top with cheddar cheese. Bake for 10 minutes at 450 or place under the broiler until top bubbles and browns slightly.

Makes 2 servings.

    This is a great recipe! Using the laughing cow cheese and milk make it smooth and creamy and you don't even notice that you're missing butter or sour cream. I also added Morningstar's fake bacon. - 4/2/11
