Crazy Quinoa Craisin Muffins

Ingredients
1 cup cooked quinoa2 Tbsp canola or vegetable oil1 cup flour1/2 cup splenda brown sugar blend3/4 tsp baking powder1/2 tsp salt2/3 cup craisins1/4 cup and 1/8 cup nonfat milk1 large egg1 tsp vanilla
Directions
Mix oil, brown sugar, milk, egg and vanilla in a large bowl.

In a small bowl mix dry ingredients and blend into large bowl mixture.

Once combined add quinoa and craisins and stir until blended,

Drop even amounts into 12 muffin cups (I used an ice cream scooper to keep amounts even).

Put in 350 degree oven for 25 minutes. Enjoy!
