Simple stir fried rice

1 t sesame oil1/2 C shredded carrot1/4 C chopped onion1/4 t olive oil (mister)2 eggs, raw, scrambled1 T lite soy sauce2 C cooked basmati rice
In a hot pan add sesame oil and quick cook the carrot and onion for 1 minute. Remove from the pan. Spray pan with olive oil, add the egg, spread it thinly around the pan. When set, pull a spatula edge across it several times to create strips. Then run the spatula under it to loosen. Add the carrot and onion back along with the rice and soy sauce. Mix it, eat it, love it!
This makes 4 - 3/4 C servings.
