Ingredients
1.5 eggs (I usually double the recipe and share)3 sundried tomatoes finely chopped1/3 C Red and Yellow peppers (total 1/3 c or to taste)1 oz Feta Cheese1/3 C Ham, finely chopped
Directions
Break eggs and mix with fork. Add sun-dried tomatoes and peppers and ham, cook in a skillet with cocoanut oil or olive oil. Once omelet is ready to flip in half add feta cheese.

    This was great! We are having it again, just 3 days later. This time we will be using more tomatoes. There were over powered by the peppers last time. - 2/21/10
