Pumpkin Hummus

Ingredients
Pumpkin, cooked, 1.5 cup, mashed (remove)Tahini, 1.5 tbsp (remove)Olive Oil, 1 tbsp (remove)Garlic, 2 clove (remove) Lemon Juice, 1 fl oz (remove) Cumin ground, 1 tsp (remove)Salt to tasteCayenne if desired
Directions
Used canned pumpkin or fresh-roasted.
Mince garlic.
Mix all ingredients in food processor or blender until smooth.

You may need to tweak the ingredients to taste... I like more garlic. None of the amounts presented here are exact.

    I just HAD to try this combo of two of my favorite flavors. I think I needed more garlic and my next go around I'll add it and I'm sure I'll think it excellent. I served it with veggie sticks and homemade pita chips. I think I'll use my leftovers as a sandwich spread instead of mayo. - 12/6/09
