Sweet Potatoe Mash

5 Medium Yams or Sweet Potatoes, Scrubbed3 Small Bananas, leave in peel and chop off stem2 T. Honey1 T. Cinnamon
Preheat the oven to 425 degrees F. Line a large baking sheet with foil. Prick the sweet potatoes all over with a fork. Cut sweet potatoes in half lengthwise and place them cut side down in a roasting pan and roast for 30-35 minutes. For the last 10-15 minutes of cooking time, place cut unpeeled bananas in with sweet potatoes. Roast until potatoes and bananas are very soft. The banana peel will potatoes and bananas are very soft. The banana peel will urn black, they will squeeze out of the hole you created easily. Remove the pan from the oven but don't turn the oven off.
When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. (If you have silicone gloves, you can handle the potatoes while they are still hot. Add honey, bananas, and cinnamon (option: you can add a pinch of sea salt as well, or omit if you're watching your sodium). Mix well with a hand mixer. Place in an oven proof dish and reheat for 10 minutes.
