Meg's Whole Wheat Chocolate Chip Cookies

2.25 cups flour3/4 cup light butter with canola oil3/4 cup organic sugar3/4 cup organic light brown sugar, firmly packed1/3 cup egg white substitute1.25 tsp vanilla extract2.25 cups flour1 tsp baking soda1 tsp salt8 oz (about 3/4 bag) semi-sweet mini chocolate chips
Preheat oven to 350 degrees.
In a large bowl, combine the butter, sugar and brown sugar. Beat with an electric mixture until smooth. Add the vanilla extract and egg whites and blend.
In a different bowl, mix together flour, baking soda and salt until well combined. Slowly add to the other bowl, mixing as you add it. Once everything is well mixed together, add chocolate chips, mixing in with a spoon.
Drop by tablespoons onto parchment paper-lined cookie sheets. Bake for 10-14 minutes. Let cool on metal cooling racks.
