Kale and Potato Soup

Ingredients
1 bunch of kale leaves chopped, approx. 4 cups1.25 lbs red potatoes, washed, chopped in 2" cubes, skin on1 large yellow onion, diced6 cloves of garlic, roughly chopped1 tsp red pepper flakes (like the kind you put on pizza)4 tbsp parsely for garnish1 bay leaf2 tbsp olive oil7 cups watersalt and black pepper to taste3 cups of plain yogurt, soy or dairy (optional)
Directions
Add olive oil, onions, garlic, red pepper flakes and a bay leaf to a large pot over medium heat. Cook for 3 to 4 minutes. add potatoes and one cup of water. Cook for 5 minutes. Add kale and remaining water, cook for 30 minutes or until potatoes are soft. Break up some of the potatoes with the back of a wooden spoon or spatula. Serve with parsley and if desired with a dollop of sour cream, yogurt or the equivalent.

    this was good - but I changed it by using vegetable broth - it gave it so much more flavor. And I used more kale. And did'nt use the bay leaf... - 3/13/13
