Goaring cheese enchiladas

* Sour Cream, reduced fat, 0.75 cup* Monterey Cheese, 1.5 cup, shredded* Cheese, Mexican Style Cheese, 2.5 cup* Mission Premium Blend Tortilla, 9 * Green Chili Peppers, canned, 0.8 cup (7 oz can)* Parsley, dried, 1 tbsp* Old El Paso Green Chile Enchilada Sauce, 28 oz can -- probably won't need it all -- about 3/4 of the can
Mix sour cream, cheeses (reserving about 0.25 cup for the top later) green chili peppers (used the can with the diced green chilies), parsley. Roll mixture into the tortillas enchilada style and place in glass baking dish (something like 9x12 works well). Then pour enchilada sauce over them all and sprinkle with cheese. Bake at 425 degrees with no cover for 20 minutes or until bubbling around the edges.
This could be a lower fat /calorie recipe is you use low fat cheese (didn't have any on hand) or if you substitue some of the cheese with baked potato -- which works great we have done it many times, just didn't have time to bake potatos this time!)
