Dark Chocolate Banana Oat Muffins

Ingredients

1 cup flour (white or wheat)1 cup quick oats1/2 cup brown sugar1 tsp baking powder1/2 tsp baking soda1 tbsp ground cinnamon1 tbsp vanilla extract2 egg whites1/2 cup water1/2 cup applesauce1 or 2 bananas, mashed1/2 bar bittersweet baking chocolate, chopped OR 1/3 cup your choice of chocolate chips1/3 cup chopped walnuts (optional, not included in nutritional information)
Makes about 18 miniature muffins.
Preheat oven to 400F. Prepare muffin tins with nonstick spray.
Mix dry ingredients in one bowl and set aside. Beat eggs with other wet ingredients and then combine in the bowl with the dry. Stir well, but it's not the end of the world if there are a few little chunks. I usually add chocolate and any other chunky ingredients last.
Fill each mini muffin cup about 3/4ths full with batter. They don't rise a lot because it's a heavy batter. Place in preheated oven and bake for 15 minutes or until toothpick comes out clean.
