olive oil1 medium choped onionchoped carrots and potatoes (what's left in the fridg)6 cups of homemade chicken broth herbs of your choice (i use herbs of Provence and parsley)salt and pepper to taste
In olive oil, cook the onion, carrots and potatoes for about 10 minutes. Add the herbs and cook for 2 minutes. Add the chicken broth, salt and pepper to taste. Cook for about 30 to 45 minutes till the veggies are done. Blend to cream the soup, serve and add parsley to garnish.
