1/2 cup flour (I prefer unbleached)1/2 teaspoon salt1 cup packed brown sugar2 large eggs1 cup chopped pecans
Preheat oven to 350 degrees. Prepare two mini muffin pans with either mini muffin liners or spray the pans with Pam. Mix all ingredients together. Spoon into pans, filling about 3/4 full. Bake 12-15 minutes, depending on your oven. Watch them so they don't burn! Yields 24 mini muffins. Note: You may add a pecan half to each muffin before baking, but that will change the nutritional information.
