Rice Salad

Ingredients
3 cups cooked long grain rice 3 stalks celery (chopped)1 green capsicum (bell pepper) (chopped)3 spring onions or 0.5 cup finely chopped onion0.25 cup roasted peanuts2 hard boiled eggs (chopped)Dressing:-1 tsp. curry powder0.25 tsp ground ginger1 tsp sugar0.25 tsp salt2 tsp lemon juice0.5 cup canola oil or salad oil0.25 cup malt vinegar
Directions
Mix rice, celery and capsicum together in a bowl.
Make dressing and mix through salad.
The above can be made several days in advanced and kept refridgerated.
Before serving add & mix into the salad peanuts and eggs
Makes 6 cup size servings.
