Pretzel Crusted Mahi Mahi

Ingredients
4 (4-5 ounce) Mahi-mahi fillet (or any type of fish you like)4 servings of butter pretzels (usually a serving is one ounce)saltCooking spray
Directions
Preheat the broiler on high, and spray a baking sheet with cooking spray. Put the butter pretzels and salt to taste in a food processor to make crumbs (you could probably smash them in a baggie with a meat mallet or something to avoid the food processor), and spread the crumbs on a plate. Wet the fish with water, then press the fish into the pretzel crumbs firmly, so they stick. Flip it over and press the other side. Use your hand to make sure the whole fillet is covered with the crumbs. Place the fish on the baking sheet, and then spray the pretzel coating with a little bit of cooking spray (this will make it crispy in the oven). Put the sheet under the broiler for a few minutes until the pretzels start to darken. Flip the fish over and broil for a few more minutes until the pretzels are crispy and the fish flakes easily with a fork. Serves 4.
