Brittany's Vegan Lasagna

Ingredients
Whole Wheat Lasanga -- whole boxPasta sauceTofuFrozen SpinachZucchiniMushroomsOnionsGarlic cloves
Directions
1. Boil pasta noodles
2. Cook frozen spinach in its own pan
3. Cut and pan saute Zucchini, Mushrooms, Onions, Garlic and any other vegetable
4. Heat pasta sauce and add sauteed vegetables when they are golden brown.
5. Lay noodles and alternate between noodles and sauce mix.
6. Firm Tofu takes on the consistentcy of ricotta cheese when crumble and mashed by hand. On the next to last layer, place a layer of tofu. Season with salt.
7. Place another layer of noodles and pasta sauce.
8. Bake for 20 mins at 350 degrees.
