Chicken Vegetable Salad Vegetarian

Ingredients
15 strips Morningstar Chicken Strips Chopped (cooked in microwave for about 2 min. until warm)4 Tbls. Mayonnaise - Smart Balance Omega Plus1 Celery Stalk chopped1/2 cup Carrots shredded2 Mushrooms chopped20 Spinach leaves slightly chopped 1/2 of an Apple chopped (don't need to peel)Black Pepper to taste
Directions
Can use a couple of Tbls. of broth or water when heating up chicken strips then chop them into bits. Stir together chopped vegetables, chicken & mayo & add black pepper to taste. Nice if you can let sit in the refrigerator for an hour before making your sandwich. Use your favorite roll, bread or crackers. Depending on size of the bread or rolls you use this should make about 4 to 6 sandwiches. I'm going to do the nutrition for 4 servings.
