Chop chicken into 2 inch strips. Chop vegetables into bite size pieces. Heat oil in skillet. Stir-Fry chicken until cooked through, then add vegetables and stir-fry about 2 to 3 minutes until broccoli and carrots are just tender. Serve over rice.
