SpicesThai spices -red pepper flakes or Trader Joes Red Chili FlakesGarlic PowderItalianDuck Oyster Suace(optional) Soy SauceLemon pepper (optional) and just a tsp. if used .Tofu (Firm)Eggplant (1 Fresh)I also like using Trader Joes Frozen Breaded or 1 Fresh Eggplant diced and cubed.Spinach Leavesor can place grilled Veggies on a Mixed Herb Salad.topped with a tsp. of Grapeseed oilor wrap it in a whole wheat Wrap.
Take out your Tofu,(Firm works good)
Add a tsp. of grapeseed oil ,but this is optional
Add Thai spices-or Trader Joe's red chil pepper flakes pepper Flakes,Tsp.
Add Garlic Powder about a Tsp.
optional (a dash of italian mix Dry) or fresh parsely
Drizzle about 3 tablespoons of Oyster Duck Sauce, Technically this is not Vegetarian,so you can use soy sauce or soyaki or terakayi sauce as well. I just happened to have Duck sauce in my Fridge.
Can also let marinate for 30 minutes in fridge with the Tofu.
Place on Grill.
I use a George Foreman Grill.
Place Tofu,Then Add the Eggplant ,also drizzled in some Duck sauce You can use Fresh Eggplant,but I like Frozen Trader Joes Eggplant Cutlets and dice the Patties up after they are cooked.
Add Shitake Mushrooms with sauce and thia seasoning as well and place on the grill.
I had dried packaged Shitake Mushrooms on hand which I soaked for 30 minutes before I grilled them,but you can use Fresh as well.
Meanwhile steam your spinach untill set. You can also put it on grill,but it will cook better steamed.
Can add a tsp. of butter or butter subsitute to Shitake Mushrooms,
You can also omitt Spinach and place Eggplant, Tofu
Mushroom mixture on a bed of baby green salad with your favortie dressing. I just use a tsp. of Grapeseed Oil.
Can also mix some baby portebello mushrooms in as well.
Grill for about 10 minutes or until done.
Spoon out grilled Veggie Mixture onto either a Wrap or a Whole Wheat Tortilla.
