Broccoli Casserole

Ingredients
3 (12 oz.) pkg. frozen chopped broccoli, cooked1/2 cup (equal to 2 eggs) egg substitute1 can healthy request cream of mushroom soup1 cup reduced fat mayo with olive oil1 1/4 cup cheddar cheese, shredded2 T. onion, chopped1 dash pepper15 reduced fat Ritz cracker, crushed
Directions
In a large bowl, combine the broccoli, egg substitute, soup, and mayo. Stir in the cheese, onion, and pepper. Coat a 3-quart casserole with non-stick spray, and pour broccoli-cheese mixture into it. Sprinkle the crushed crackers on top. Bake at 350 until the sauce is hot and bubbly, about 30 minutes. Yield: 8 servings.
