Sharon's Spicy Lean Beef Chili con Carne

Ingredients
1 lb. Lean Ground Beef (90%)2 cans (15.5 oz) Goya Black beans1 can (15.5 Micasa Red beans1 can (15.5 oz.) Taco Bell Refried Beans1 can (14.5 ox.) Del Monte Whole Kernel Corn, no salt added1 can (14.5 oz.) Del Monte Cream style corn2 cans (14.5 oz.) Hunt's Diced Tomatoes3 Tbsp. Chili Powder1 Tbsp. Cumin2 Tsp. Oregano.5 tsp. Black pepper.5 tsp. Crushed red pepper flakes1 Cup Chopped green bell pepper1 Cup Chopped Onion3 Cloves Garlic, minced
Directions
Saute beef in large non-stick pan using non-stick cooking spray until no longer pink. Add chopped peppers, onions, and minced garlic and continue to cook until vegs. soften. Add dry seasonings and stir. Add remaining canned veggies and bring almost to a boil, then lower heat and cook over med. heat about 30 to 45 minutes. Makes approximately 16 (1 cup) servings.

Note: For a slightly lighter version substitute ground turkey for the beef.

    I used a can of Northern Beans instead of Refried Beans, and it was also Really yummy. Not spicy at all though. If you like spice: try substituting Hot Rotel Tomatoes in place of one of the Hunts Diced Tomatoes. Great Recipe! - 1/17/08
