Goat Cheese Veggie Omelet

Ingredients
2 egg whites1 medium egg1 flowert cauliflower1 stalk broccoli2 medium carrots1 oz goat cheeseNatural cooking spray (or pam)
Directions
Microwave broccoli and cauliflower for 45 seconds. Peel and chop carrots. Spray cooking spray into pot and saute broccoli, cauliflower and carrots. Whisk egg whites and eggs. Pour over veggies. Scramble until firm. Dap goat cheese on top of cooked eggs. Voila. Delicious, high protein omelet--good for breakfast, lunch or dinner!
