Salad capresse with green and yellow beans

Ingredients
Pine Nuts, 1 tbsp Green Beans (snap), 150 grams /5oz Beans, yellow, 150 grams/ 5oz Olive Oil, 2 1tsp Mozzarella Cheese, part skim milk, 2 oz Basil, 10 leaves Salt, pepper
Directions
Toast the pine nuts for around 5 minutes in an oven (275F).

Bring the water to boil in a large saucepan. And the beans and boil for 3 minutes. Transfer them quickly to a bowl full with icy water to stop the cooking. Drain well, then add the olive oil, salt and pepper as you like.

Slice mozzarella in 2 slices. The cut them in half. Arrange on plates altrenating beans and cheese. Add pine nuts and basil leaves.

    I had it several times now. Very nice. I only used french green beens. Super nice. Once I have tried to add some tomatoes for colour. I have added some crushed garlic, some italian herbs and some balsamic vinegar, for more flavour. Love love m - 5/30/07
