Lemon & Coconut Oat Muffins

Ingredients
2 eggs1/2 cup brown sugar4 tbsp sunflower oiljuice of 1 lemonrind of 1 lemon1/2 cup low fat milk1/2 cup oat bran1/2 cup oats1/2 cup chocolate chips1/2 cup shredded coconut1tsp baking powder1/2 tsp baking soda
Directions
mix eggs and brown sugar then add oil and mix. Add lemon juice, rind and milk and mix. Then add oats, oat bran, chocolate chips, coconut and sieve both flours and the baking powder and soda. Mix thoroughly and share between 12 muffin cases and put in the oven at 170C (not sure what that is in farenheit) for 22 minutes (mine is a fan oven so if you don't have one you may need a few more minutes).

These are great for breakfast or for mid-morning snack. I sometimes warm them up in the microwave for 15 - 20 seconds.
