Pumpkin Spice Cake

4 Large Eggs1.5 C Organic Sugar1 can (15 ounces) 100% pumpkin2 cups organic white flour2 tsp baking powder2 tsp ground cinnamon1 tsp baking soda1/2 tsp salt1/2 tsp ground ginger1/4 tsp groung cloves
Heat oven to 350. lightly grease a 15 1/2 + 10 1/2 pan. ( i use a standard casserole dish/ rectangle cake pan).
Beat eggs, sugar, applesauce and pumpkin in a large bowl until smooth.
stir in flour, baking powder, cinnamon, baking soda, salt, ginger, and cloves.
spread in pan. bake for 25-30 mins, or until light brown.
cool completely on wire rack, about 2 hours, if adding cream cheese frosting... sprinkle chopped walnuts on top and store in refrigerator.
