Spanish Omelet

1 teaspoon olive oil4 egg whites2 whole eggs1/3 cup fresh spinach2 tablespoon salsa1/2 cup Spanish rice with peas and carrots10 medium olives, sliced thin
Heat Spanish rice with peas and carrots in small skillet. Set aside.
Heat oil in large skillet on medium heat. Add eggs and stir to mix, turn down heat. When the top has cooked to firm, place the salsa, spinach, olives and spanish rice on 1/3 of omelet. old over.
Cut in half. Serves 2.
