Peppermint Kisses

2 egg whites1/8 tsp cream of tartar1/2 cup sugar1/4 tsp peppermint extractfew drops red food coloring1 cup mini chocolate chips
Separate yolks from egg whites; place egg whites in glass or metal bowl and discard yolks. Let egg whites sit at room temperature for 30 minutes. Using electric mixer, beat until foamy. Add cream of tartar, beat until peaks stand up but are not dry. Add sugar, 2 Tbsp at a time, beating after each addition. Fold in peppermint extract, food coloring, and mini chocolate chips. Drop by tablespoons onto cookie sheets lined with parchment paper. Bake for 25 minutes at 300 degrees.
