ED'S Steamed Mussels with White Wine & Cilantro

Ingredients
5 lbs of Mussels, expect 10% loss2 cups dry white wine3 shallots, finely chopped1 bay leaf.5 tsp dried thyme, or 2 sprigs fresh3 tbsp Cilantro finely chopped
Directions
Makes 4 main course sevings or 8 first course servings

Wash the mussels and toss any that are open.
Combine wine, shallots, thyme, and bay leaf in a 10 quart pot. Bring to a slow simmer over medium heat. Simmer for 5 minutes. Then add the mussels , cover the pot and turn the heat up to high.
When steam starts to shoot out from under the lid, turn the heat back down to medium. Continue to leave the pot on the heat for another 5 minutes. Shake tjhe pot, to redistribute the mussels, continue to heat for 2 more minutes. Remove the lid and check to see if the mussels have opened. If not, rplace the lid and continue for another 2 minutes.
Remove the pot from the heat and scoop out the mussels to warm bowls. Discard unopened mussels. Strain the broth if necessary and add the cilantro and season to taste.
Reheat the broth for a minute or two and laddle over the hot mussels. Serve with crusty bread
