Easy Ramen Noodle Stir Fry

3 pounds lean beef steak, cut into thin strips3 packages Ramen Noodles (oriental flavor)1 bag stir fry vegetables (with sauce packets)1/4 cup low sodium stir fry sauce2 cups water
Makes 10 - 2 cup servings.
Spray large nonstick skillet with cooking spray; heat over medium-high heat. Cook beek in skillet 3 to 5 minutes, stirring occasionally, or until brown. Remove beef from skillet.
Heat water to boiling in skillet (or another pot). Break blocks of noodles from soup mix into water; stir until slightly softened. Stir in vegetables. Heat to boiling. Boil 5 to 7 minutes, stirring occasionally, or until vegetables are crisp-tender.
Stir contents of seasoning packet from soup mix, stir-fry sauce packets, 1/4 cup additional stir fry sauce and beef. Cook 2 to 3 minutes, stirring frequently, until hot. Serve in individual bowls.
*I have found it easier to steam the vegetables separately, boil the noodles separately and cook the beef separately, simmering the beef in the stir fry sauce and noodle seasoning. Then I stir the ingredients together.*
