Peach & Coconut Muffins

Ingredients
3 cups whole wheat flour1 tbsp cinnamon1 tsp salt1 tsp baking soda1 cup vegetable or corn oil2 eggs1 cup sugar 1/4 cup flaked coconut2 cups chopped peaches
Directions
Preheat oven to 350 degrees.
Gently beat eggs with a fork.
Add sugar, flour, cinnamon, coconut, soda and salt.
Stir in oil and peaches.
Spoon into non stick muffin tin and bake 25 minutes or until lightly brown.

    My family LOVED this! We would certainly make it again. I would only make a few minor changes, add oat bran (1 cup), vanilla extract (1 tsp) and a few more peaches. FANTASTIC!!!!! Thanks for sharing. - 7/27/08
