Easy Orange Mustard Pork Loins

2 boneless pork loins, trimmed of all fat3 Tbsp honey mustard3 Tbsp orange juice3 Tbsp soy sauce
1. Spray a skillet with cooking spray.
2. Brown the pork loins on one side.
3. While they're browning, mix the soy sauce, orange juice, and honey mustard in a small bowl with a fork until well blended.
4. Turn the pork loins and add the soy sauce mixture.
5. Bring to a boil, then reduce heat and cover.
6. Cook for about 10 - 15 minutes (until pork loins reach an internal temperature of 170 degrees F), occasionally using a spoon to baste the top of the loins with the soy sauce mixture. (The mixture will thicken as it's cooking.)
Makes 2 servings, 1 loin a piece.
