Black Bean Brownies

Ingredients
1 can black beans3 eggs3 T vegetable oil2 tsp SF vanilla syrup (can use vanilla extract)1 pinch salt2 tsp baking powder1/4 cup cocoa powder, unsweetened3/4 cup sugar substitute (I used Splenda granular)1 T instant coffee (heaping Tbsp)1/4 cup dark chocolate chips1/4 cup walnut pieces
Directions
Preheat oven to 350 degrees and cover a 9X9 baking pan with non-stick spray. (If using glass, reduce temperature by 25 degrees)

Using a blender or food processor mix all ingredients except chocolate chips and walnuts. Blend thoroughly until beans are smooth. Fold in dark chocolate chips and walnut pieces or spread evenly across the top, if preferred.

Bake 35 - 40 minutes. The brownies will appear slighly unset in the middle. They will firm up while cooling some. If you like cakey brownies, bake until well set.

Allow to cool completely. Cut the pan in to 25 servings and serve.

    Made for a potluck and we all really liked them. WIll make again using full sugar for my kids. SPlenda baking mix left a little after taste. DOn't cook too long or they crumble!! - 3/26/10

    I am not sure what I did wrong on this recipe but the brownies turned out gross! Not only did they taste awful, but they literally crumbled in the pan when I tried to cut into serving pieces. Since I followed the recipe as stated, I will most likly not try it again. - 1/10/10
