Indian-style Scrambled Eggs

Ingredients
18 eggs- 9 just egg white, 9 whole1 onion1 tomato1 red bell pepper2 jalapeno peppers (more/less to taste)2 tbs canola oilsalt to tastedash of lemon juice
Directions
Sautee onions and red peppers in oil until onions are golden brown. Add diced tomato and minced jalapenos. Sweat vegetables for a few minutes, until tomatoes are cooked through. Add egg mixture, salt, and dash of lemon juice. Cook until eggs reach desired consistency.
