Spaghetti Squash w/Mushrooms & Shrimp

Ingredients
1 spaghetti squash1 lb. shrimp unpeeled raw8 oz. mushrrooms sliced2tb butter1-1/2 tbs flour3/4cup 2% milk1 cup grated parmesan cheese fresh1 tbs essencescalllionsblack pepper1 tbs dry sherry
Directions
Cook spaghetti squash, let cool and shred.
Cook unpeeled shrimp w/ a little old bay & garlic cloves. Reserve the liquid and cook mushrooms in this juice w/ a little butter.
Peel shrimp and set aside with mushrooms.
Add the flour and butter to make roux, then add milk and sherry and 3/4 parm cheese. Add black pepper and Essence.
When thickened, return shrimp and mushrooms to pan.
Add the rest of the cheese and serve with scallions on top.
