Southwest Spicy Fish Sandwich

2 Tbsp. extra virgin olive oil4 6 oz. tilapia filets1 Tbsp. Emeril's Southwest Seasoning4 oz. cheddar cheese, shredded1 c. Miracle Whip1 7 or 8 oz. can Chipotle peppers in adobe sauce4 large sesame seed buns1 Tbsp. butter, unsalted4 large leaves romain lettuce
Heat olive oil on medium heat in a large frying pan. Sprinkle tilapia filets liberally with Emeril's Southwest Seasoning. When oil is hot, add filets. Cook 3 minutes on each side. Remove fish to a plate.
Make chipotle dressing (see recipe below).
Heat grill pan to medium high. Lightly butter the buns and grill, buttered side down until browned. Add cheese to the bottom of each bun. Melt the cheese under a broiler or toaster over and remove from oven. Add a fish filet to each bun. Place a romaine lettuce leaf on top of the fish. Add 1 tablespoon of chipotle dressing to each but top and place the bun on top of lettuce.
CHIPOTLE DRESSING
Put chipotle peppers in food processor. Pulse until peppers are well chopped. Add 3 tablespoons of the chipotle sauce to Miracle Whip. Freeze or refrigerate remaining chipotle sauce. Refrigerate remaining chipotle dressing for more sandwiches later!
Yield: 4 sandwiches.
