Low Fat Oatmeal Muffins

Ingredients
1 cup rolled oats (not instant or quick cooking)1 cup low-fat buttermilk1/2 cup unsweetened applesauce1/4 cup egg substitute1 tsp vanilla extract1 cup whole wheat bread flour1 1/8 tsp baking powder1/2 + 1/8 tsp baking soda1/2 tsp salt1/2 tsp ground cinamon1/8 tsp ground nutmeg1/2 cup packed brown sugar (dark or light)
Directions
In a small bowl, mix oatmeal with buttermilk. Set aside for 1/2 hour. In separate bowl, mix all dry ingredients. Set aside. At end of 1/2 hour wait, add applesauce, egg substitute, vanilla. Let stand (approximately) 1.5 hours to come to room temperature. Bake 375 deg F 20-25 minutes or until toothpick comes out clean. Let cool 5 minutes in pan on a cooling rack.
