Shoepeg corn, bell pepper and celery salad

Ingredients
1 cup shoepeg corn1 cup chopped green bell pepper1 cup chopped red bell pepper1 cup chopped celery1 cup chopped onion1/2 cup olive oil1/2 cup vinegar (your favorite choice)1/2 cup splenda
Directions
Cut the green and red bell peppers and the celery
Add the shoepeg corn
Mix in a food processor to desired consistency

In a sauce pan mix 1/2 cup of olive oil and 1/2 cup of vinegar with 1/2 cup of splenda and bring to a boil. Remove from the stove and pour over the vegetables and stir well.

Refrigerate.
