Oatmeal Cookies with Craisins, Walnuts & Pecans

2/3 cup splenda for baking zero calories1/2 cup packed splenda brown sugar1/2 cup I can't believe it's not butter for cooking & baking1/2 cup shortening1 tsp baking soda1 tsp ground cinnamon1 tsp vanilla1/2 tsp baking powder1/2 tsp salt2 large eggs1 large egg white3 cups old-fashioned oats1 cup all-purpose flour1 cup craisins1/3 chopped walnuts1 pecan per cookie
1. Heat oven to 375 degrees
2. In a large bowl, beat all ingredients except oats, flour, craisins and walnuts with electric mixer on medium or mix with spoon. Stir in oats, flour, craisins and walnuts.
3. On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
4. Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to wire rack.
Makes roughly 3 dozen cookies
