Vegan Champagne Truffles

.5 Cup Raw Cashews.5 Cup Water1 Bag (12 oz) of dark chocolate chips/chunks/shavings.25 Cup Earth Balance (or other vegan butter substitute)3 Ounces ChampagneCocoa Powder to roll the truffles in (roughly 3 TBSP for this batch)*You can also roll them in coconut but you will need to adjust the nutritional information accordingly.
Makes about 35 to 40 truffles.
Blend the water and cashews together for about 2 or 3 minutes or until very creamy. You may have to stop and periodically scrape down the sides to make sure it all blends well.
Heat the chocolate in a double-boiler or microwave until melted.
Fold in the Earth Balance and Cashews and then gently stir in the Champagne.
Refrigerate 1 to 2 hours.
Remove from fridge, form into 1" balls, roll in cocoa powder, and place on wax paper. Cool further and then serve in mini muffin cups.
