Low Sugar Velveeta Fudge

6 oz Velveeta Cheese Product1/2 cup butter3 squares Baker's unsweetened chocolate 1 Tablespoon Karo Syrup1 1/2 cups Whey Low Granular1 1/2 cups Powdered Erythritol1 cup Powdered Maltitol3/4 cup chopped pecans1 teapoon vanilla extract
In a microwave safe medium bowl, place cheese, chocolate, butter and Karo syrup. Zap for 1 minute and stir. Continue to zap at 15 second intervals until completely melted, stirring often
In a strong mixer (I use a Kitchen Aid) combine the sugar substitutes and attach the paddle. Run for two or three minutes to remove lumps. Add the chocolate cheese mixture a little at a time and mix. Pour in pecans and vanilla and continue mixing for a minute.
Pour into a 9 x 9 buttered pan and chill until firm.
Cut into 64 small pieces - this is very rich! Enjoy!
