Quinoa Pilaf

Ingredients
1/4 tsp saffron threads1 2/3 cups chicken broth (heated)1 cup quinoa (red or white)1 medium onion, minced1 tbsp olive oil2 tsp toasted cumin seeds1/2 cup diced red pepper1 bay leafsalt to taste2-3 tbsp minced fresh cilantro
Directions
Steep saffron in chicken broth.
Rinse quinoa under running cold water and drain well.
In a saucepan, cook the onion in the oil over moderate heat until softened, Add the garlic and cumin seed and cook stirring 1 minute more. Add the broth mixture, quinoa, red pepper, bay leaf and salt, bring to a boil and simmer, covered for 15 minutes. remove pan from heat and let stand 5 minutes. Service with fresh cilantro. Serves 4
