Sour Cream Chicken Enchalida Soup

Ingredients
3 c. diced cooked chicken2 cans hot Rotel2 bags of boil in bag long grain brown rice2 1/2 TBS cilantro2 c. sauted onions24 oz light sour cream2 cans cream of chicken soup5 c chicken brothto taste: black pepper, white pepper, hot shot, garlic salt, ceyanne,and chili powder
Directions
In a sauce pan combine sour cream, soup, and cilantro. Heat.

Add cooked chicken, rotel, sauted onions, chilis and cooked rice.
Heat.

Add spices to taste.

    This was very good, but too spicy for my kids. Not sure if they would have eaten it anyway, but I will make this again. I didn't have rotel, so I just used salsa instead. I also used the sour cream I had in the fridge (about 12oz) and it still turned out really good. Thanks! - 1/7/10
