Green Curry Tilapia

Ingredients
1 onion, chopped super fine in a choppercilantro 2 jalapenos2 tbsp shredded, unsweetened coconutjuice of 1 limesalt and pepper to taste1/2 tsp turmeric1/4 tsp coriander1/4 tsp cumin3/4 c Greek yogurt1 tbsp butter (to fry the onions in)1/4 fennel seeds1 lb tilapia2/3 c water
Directions
Mash the onions as small as possible with the jalapenos, fennel seeds and cilantro. Put to the side.

Cube the tilapia and add the lime juice and turmeric. Allow to marinate for 15 minutes.

Heat up the butter and then add the onion mixture. Once the onion starts to become translucent, add the rest of the spices, salt, pepper and water. Cook for about 2 minutes. Add yogurt and fish. Cover and simmer for 10 minutes.

Serve with spinach salad and yogurt dressing.
