Ingredients
4 medium bakers1/3 c. lite sour cream1/8 t. salt1/8 t. pepper1 T. fresh chives1 T. margarine or butter
Directions
peel, cut, boil potaotes for 20 minutes in salt water.
drain
with mixer, mix potatoes, s.c. amd s+p,
fold in chives
spoon mixture into 4 8-oz containers and drizzle with melted butter
bake uncovered 350 for 20 minutes

    These are declicious! Very creamy. I skipped the baking at the end and the butter and just put it on the plate with a little gravy. Definitely a keeper. - 4/17/13
