Louisiana Crab Cakes

Ingredients
1 lb canned lump crabmeat3/4 cup seasoned bread crumbs3/4 cup cornmeal3 Tbsp scallions, minced2 Tbsp lemon juice2 Tbsp plain fat free yogurt1/2 tsp paprika1/8 tsp salt2 Tbsp fat free egg substitute1 small jalapeno pepper, seeded & finely chopped1 tsp olive oil
Directions
Combine all ingredients in a medium bowl, stirring well. Shape into 8 half inch thick patties.

Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil. Place over medium heat until hot. Place patties in skillet and cook 3 minutes on each side or until golden.

Yield: 8 Servings (1 crab cake per serving)
