Teriyaki Tofu Salad

3 cups baby spinach1.5 cups sliced avocado0.5 cups shredded carrot1 piece sliced of Trader Joe's Baked Tofu - Teriyaki Flavor2 cups diced mushrooms1 cup diced tomatoes0.25 cups chopped walnuts
Add all ingredients together and toss well. Serve with low calorie dressing. (I used Newmen's Own Low Calorie Sesame Ginger dressing).
*NOTE* If you plan on keeping left-overs of this salad, toss the avocado with a squeeze of lemon before adding to the salad, so that it doesn't turn brown.
